Halloween may look a little different this year, but that doesn’t mean we won’t be celebrating. We’re thinking scary films on the sofa (hello, Hocus Pocus) with ALL the festive snacks. So, we’ve teamed up with @WhatLuceEats to bring you a *seriously spooky* vegan Halloween nacho recipe. It’s quick, easy to follow, and delicious to eat. Here’s what you’ll need and how to make them...
THE INGREDIENTS
For the nachos:
4 x large white tortilla wraps
2 x tablespoons of extra virgin olive oil
Salt
For the guacamole:
1 x teaspoon of extra virgin olive oil
2 x large avocados
3 x cherry tomatoes (diced)
Juice from 1/2 lime
Pinch of salt
1/4 red onion (diced)
Handful of fresh coriander (chopped)
1/2 garlic cloves (crushed)
Pinch of chilli flakes
For the pico de gallo:
20 cherry tomatoes (diced)
1/2 white onion (diced)
Handful of fresh coriander (chopped)
1/2 teaspoon of salt
Juice of 1/2 lime
Pinch of chilli flakes?
THE METHOD
- To start, preheat the oven to 180c and line a couple of trays with parchment paper.
- Using your Halloween stencils, cut out the nachos and place them on the baking trays.
- Brush the nachos with olive oil and season with salt before placing in the oven for 12 minutes.
- Meanwhile, prepare the guacamole by combining all of the ingredients together.
- Do the same for the pico de gallo.
- Serve the nachos with the dips and enjoy.
